Meat :: How Our Sausages Are Made

Our sausage making process typically comprises 4 steps: [1] Mixing Sausage Meat; [2] Transferring Sausage Meat Into The Filler; [3] Linking Sausages; and [4] Packing Sausages.

[1] Mixing Sausage Meat
First, a quantity of rusk (i.e. dehydrated breadcrumbs) is emptied into the chopper.

Next, a small bag of seasoning/binder (pink in colour) is sprinkled over the rusk.

Following this, ground sausage meat (consisting of pork and fat) is added, and is spread around the basin of the chopper.

Then, a few litres of water are added. This helps the rusk and seasoning to absorb better into the sausage meat.

Finally, the chopper is switched on and the sausage meat is mixed for a couple of minutes.

[2] Transferring Sausage Meat Into The Filler [top]
Once the sausage meat has been mixed to the correct consistency, the chopper is switched off.

Then, the mixed sausage meat - weighing as much as 70lbs - is carefully gathered by hand and transferred to the filler.

[3] Linking Sausages [top]
Once the filler has been loaded with the mixed sausage meat, the linker is switched on.

Consequently, the contents of the filler are injected into empty sausage skins, and the linked sausages collected in a plastic container. This machine is capable of producing nearly 100 sausages per minute.

[4] Packing Sausages [top]
Once the sausages are linked, they are ready for sale in our meat counter.

In this video, however, sausages are being packed ready for delivery to customers such as hospitals.
